Knead for 6-8 minutes. Rest for 10 minutes. Divide into pieces and rest for another 20-30 minutes. Leave to rise in a proofing cabinet at 30°C, 75% humidity for 80-90 minutes. Fill as desired. Bake at 200-220°C for 30 minutes.
